Just Add Water)
My
4-year-old grand daughter, Julia and I tackled Ecco La Pasta's homemade
potato gnocchi mix and had spectacular results. Julia dumped water
which we had measured together, into a bowl containing the mix and
helped knead the dough. She rolled out "snakes," which I cut into
nuggets that she gently pressed with a fork, then arranged on a baking
sheet, ready to boil up and serve. Fresh gnocchi in time for lunch!
RP's Pasta Company, the Madison, Wis. company that makes
the mix, also sells plain and subtly flavored fresh egg pasta mixes.
The dough was easy to mix and roll out, but I had to separate the
noodles one at a time after cutting them. So the pasta, which was
excellent, took 30 min., not 10 to make.

Presto! Pasta!
We liked the texture and flavor of the
spinach pasta we made with Ecco La Pasta flour mixes, which streamline
the making of fresh pasta and gnocchi at home. Cooks just add water,
then mix it (with a mixer, food processor or by hand) and roll it out,
using a rolling machine or by hand. Four flavors of pasta flour and
four flavors of gnocchi flour are available.

Instant Noodles!
For
those torn between the quality of homemade pasta and the time it
takes to produce it, Ecco La Pasta has a line of mixes that only
require water
to produce fresh pasta and gnocchi doughs.
The gnocchi we tested was light,
pillowy and easily made in 10 minutes.

OH MY LITTLE DUMPLING
Gnocchi, small Italian potato dumplings, can be an

Combine them with meat balls, spinach, and your favorite red sauce, or
serve them drizzled with olive oil and smothered in shaved Parmesan.
Eliminate one or two steps when making homemade gnocchi with Ecco La

have true fresh homemade pasta, you'll never go back," says Peter
Robinson, president of the Madison, Wis.-based firm.
